Preheat oven to 170° and grease your baking tins, i used 2half kg tins

Freeze your baking tins before baking, this helps in getting flat tops

Sift flour +baking powder set aside,wash and dry your orange,finely grate orange peel set the peel aside,cut Orange into half and squeeze the juice out.sieve the pulp and top up with water to make 230 ml

Beat magerine,mpishi poa and sugar mix peel and orange oil at this stage,beat until light and fluffy with a hand mixer,add eggs one by one scrapping well between additions;add sifted flour in 3 parts while alternating with Orange juice. Always start and end with flour.

Scrap the sides and the bottom of the bowl between additions,pour batter into the baking tins,sprinkle some njugu on top of the batter, bake for 45 minutes, cool after baking for 10 min before frosting or enjoy it naked
