Zarda Rice

Wash and Soak rice for 2-3 hrs.Boil 4 times water Add 2 cardamoms,2 cloves food colour.Add soaked rice in it cook on medium flame (it should be 80 percent cooked)Drain off water from rice.

In a nonstick pan heat ghee,add Cloves,cardamoms and cooked rice.Add sugar and half the quantity of dry fruits,saffron milk,half of crumbled mava and lightly mix well.

Cover the lid and cook on low flame for 5-7 mins, till sugar melts and rice is cooked completely Add essence and mix.Transfer zarda rice in a serving bowl and garnish with remaining Dry fruits and crumbled mava.Relish the sweet, flavoury zarda rice.
