Steps

Soak tamarind in around 2 glass of water till soft and De seed it.

On medium heat add the de seeded tamarind with the water, roasted zeera powder, red chili powder, black salt,dry ginger powder, salt and sugar in a sauce pan

Mix them well and let it boil for 10 to 12 minutes, while periodically stirring.

Let it cook till you have the desired consistency

At this point taste and adjust the seasonings accordingly.
Once thick, turn off the stove.
The chutney will become thicker as it cools down.Transferto a container and refrigerate it till needed.
