On a hot summer day, this plate of fresh, vibrant greens is both eye-catching and refreshing. This type of vegetable is great for cooling down.

Wash the watercress thoroughly and let it dry. Arrange it on a plate, then add cherry tomatoes, sliced onion, and shallot around the greens. Drizzle with 1 tablespoon olive oil for aroma. For the dressing, squeeze the juice of 1 lemon, add 1 tablespoon sugar, 1 teaspoon apple cider vinegar, 1 teaspoon salt, and 2 tablespoons olive oil. Mix well.
