Rinse the zucchini blossoms, split them open, and set aside.

Add salt to the cold water (it should be quite salty), then add the beer. Gradually mix in the flour until you have a very thick batter.

Stir in the remaining ingredients: finely minced garlic, hand-torn basil, grated cheeses, and grated zucchini. Meanwhile, heat the peanut oil for frying.

When the oil is hot, drop in a spoonful of batter at a time to form fritters. Fry until golden on both sides, then drain on paper towels. Serve immediately—careful, they're hot! Enjoy!
