Ingredients

20 minutes
about 30 fritters
  • 10.5 ozzucchini blossoms (about 300 g)
  • 1 1/4 cupscold water (about 300 ml)
  • 3 1/2 tablespoonscold beer (about 50 ml)
  • 3 1/4 cupsall-purpose flour (about 400 g)
  • 1 handfulgrated Parmesan cheese (optional)
  • 1 handfulgrated Pecorino cheese (optional)
  • Salt
  • Black pepper
  • 1medium zucchini, grated
  • 1small bunch fresh basil, torn by hand
  • 1 clovegarlic, finely minced
  • Peanut oil (for frying)

Steps

    Rinse the zucchini blossoms, split them open, and set aside.

    Add salt to the cold water (it should be quite salty), then add the beer. Gradually mix in the flour until you have a very thick batter.

    Stir in the remaining ingredients: finely minced garlic, hand-torn basil, grated cheeses, and grated zucchini. Meanwhile, heat the peanut oil for frying.

    When the oil is hot, drop in a spoonful of batter at a time to form fritters. Fry until golden on both sides, then drain on paper towels. Serve immediately—careful, they're hot! Enjoy!
