Ingredients

  • 3tomatoes
  • 2 tspolive oil
  • 2 clovesgarlic, finely chopped
  • 1/2medium sized onion, finely chopped
  • As requiredBell pepper(Red, Yellow and Green)
  • 1/2 cupboiled corns
  • 1/4 tspchilli flakes
  • 1/2 tspmixed herbs
  • to tasteSalt
  • 1/4 tsppepper, crushed
  • 3 tbspparmesan cheese / any cheese, grated
  • For Boiling paste:
  • 2 cupsPenne pasta or any pasta of your choice
  • 5 cupsWater or more to boil the pasta
  • As per tasteSalt

Steps

    Firstly, boil tomatoes for 5 minutes and once they are soft enough peel off the skin and blend to smooth puree.
    Meanwhile, in a large vessel cook/boil penne pasta with some salt.
    Cook the pasta for 10-12 minutes or till they are soft.Finally, drain the pasta and keep aside.
    In a large pan, heat olive oil and saute garlic till they turn translucent/aromatic.

    Also saute onions till they change colour.
    Further add prepared tomato puree and saute for 5 minutes. Then add chilli flakes, mixed herbs, pepper, salt and mix well.
    Cover and simmer for 10 minutes and after 10 minutes of cooking add in boiled pasta.
    Mix gently, making sure the pasta is well coated with the sauce.
    And your pasta is ready to be served. Serve the pasta hot topped with parmesan cheese or any cheese of your choice.
