- 3 tablespoons olive oil
- 4 boneless, skinless chicken breast halves (about 1 1/2 pounds)
- Kosher salt and freshly ground pepper to taste
- 2/3 cup flour
- 1/2 pound cleaned and thinly sliced crimini or shiitake mushrooms
- 1 shallot, minced
- 3 tablespoons chicken stock
- 1 tablespoon butter
- 1 tablespoon chopped chervil or parsley (optional, for garnish)
