Getting tired of a salad with keto.... asparagus can be prepped and ready to serve immediately as you can just pop them into the oven to roast. #mycookbook

Ingredients

  1. Bundlefresh asparagus
  2. 4garlic cloves, minced
  3. 1 cupmozzarella cheese
  4. Salt/pepper
  5. 1/2 cupParmesan cheese
  6. 3-4 tablespoonsavocado oil or extra virgin olive oil

Cooking Instructions

    Wash and dry vegetable. Snap asparagus towards the end. It will naturally separate the stringy non edible portion of the stalk. Line on baking sheet and add olive oil, salt and pepper and toss.

    Mince garlic and add to asparagus. Bake 350 degrees until crispy to your liking. (I like mine extra crispy) Next add mozzarella and Parmesan cheese. Place back into oven until cheese melts.

This has gotten to be one of my go-to's. I love this recipe. Most of the time though I leave the mozzarella cheese off. I like that cheese with it but usually I just want the Parmesan.
