Pho Pho
Everybody has their "version" of a recipe. This one is by no means meant to serve an example of authentic Vietnamese Pho. This is my version, based on what was easy for me to buy locally for ingredients. It makes a great light meal. Other add ins include grated carrot, tofu, bamboo shoots and water chestnuts. Add what you like and make it your own. Since it can be very salty, make whatever adjustments necessary to your preference. alley927cat -

Beef chow mein with kale and sweet pepper Beef chow mein with kale and sweet pepper
Chow mein with crispy noodles is one of my all-time favourite things to eat. Usually, if I'm ordering it at a restaurant, I'll get the seafood version with prawns, fish, scallops and other goodies because it has more of the umami funk I love. My wife and daughter aren't quite as fond of that, so for this version I stayed with milder but still delicious beef, which I velvetted to get it as tender as possible. I also used kale and sweet pepper I already had in the fridge. Truthfully, they can be swapped with just about any other veg of your preference. However you go about it, it's gonna be delicious. Chicken Lo Mein Chicken Lo Mein
My version of a classic Chinese-American buffet dish. Comes out like a nice, warm bowl of comfort. Just like a good fried rice starts with cold rice, I think a good lo mein starts with cold noodles. StephieCanCook
