Cooking Instructions

Beat egg whites until stiff peaks form.
In a separate bowl, mix the egg yolks, melted butter, vanilla together until combined.
In a separate bowl, sift flour, baking powder and cocoa powder.
Add the dry mixture into the wet mixture with the milk and beat.
Lastly, fold in the egg whites.
Divide mixture between 2 cake tins and bake at 180•C for 15-20mins or until a toothpick comes out clean.

Chocolate fudge Icing:-
Combine the butter and sugar in a bowl and mix well.
Add the cocoa powder and whisk.
Add the cream.
Pour the mixture into a saucepan and heat over medium heat for a few minutes. Don't let it boil. The mixture will thicken.
Take it off the heat and strain into a bowl.
Mix in the salt and vanilla essence.
Cool until room temperature and then put it in the fridge, stirring every 2 minutes. - 3
Once the cakes are cool, spread the icing onto them.
