Curried Lamb Cutlets

These lamb cutlets are so easy to make but taste so, so good!
I made these for Channel 4 Beat the Chef, where I cooked against Mark Sargent a Michelin Starred Chef! I actually still can’t believe it, that from the blind tasting panel, I got 4 votes out of 5 for this dish!! Just because I beat such a high calibre Chef these are simple to make and take just a few minutes each side !
Cooking Instructions

Trim the lamb cutlets to size! Or ask your butcher.

Next throw the add the ginger, garlic & coriander into a blender.

Add the lemon juice, salt and spices to the mix then....

Blitz...

Lay the cutlets on tin foil and brush on the marinade! Leave to rest for as long as possible.

Add a bit of oil to a frying pan and heat on a high heat for a few minutes each side and on the fat end too! Leave to rest and serve !! Enjoy 😊
