In a large pot, heat vegetable oil over medium heat. Add cumin seeds, cinnamon stick, green cardamom pods, cloves, and sauté until fragrant.
Add chopped onions and cook until golden brown.
Stir in minced garlic and grated ginger, cooking until aromatic.
Add lamb chunks to the pot, browning them on all sides.
Add coriander powder, turmeric powder, chili powder, and salt. Mix well to coat the lamb with the spices.
Pour in the blended tomato puree and cook until the oil starts to separate.
