Ingredients

  1. 1.5 kglamb, cut into chunks
  2. 1 cupchana dal (split chickpeas), soaked for 2 hours and drained
  3. 2large onions, finely chopped
  4. 4tomatoes, blended into a puree
  5. 4 clovesgarlic, minced
  6. 1thumb-sized ginger, grated
  7. 2green chilies, slit
  8. 2 tablespoonsvegetable oil
  9. 1cinnamon stick
  10. 4green cardamom pods
  11. 4cloves
  12. 1 teaspooncumin seeds
  13. 2 teaspoonscoriander powder
  14. 1 teaspoonturmeric powder
  15. 1 teaspoonchili powder
  16. 1 teaspoongaram masala
  17. Salt to taste
  18. Fresh cilantro, chopped (for garnish)

Cooking Instructions

    In a large pot, heat vegetable oil over medium heat. Add cumin seeds, cinnamon stick, green cardamom pods, cloves, and sauté until fragrant.
    Add chopped onions and cook until golden brown.
    Stir in minced garlic and grated ginger, cooking until aromatic.
    Add lamb chunks to the pot, browning them on all sides.
    Add coriander powder, turmeric powder, chili powder, and salt. Mix well to coat the lamb with the spices.
    Pour in the blended tomato puree and cook until the oil starts to separate.
