It is ideally served with bajri rotla loaded with ghee. Jaggery complements well too. It is a very good way of eating a whole lot of green garlic at one go.

Ingredients

  1. 1 cupchopped green garlic
  2. 2onion
  3. 2big tomatoes
  4. 1 inch ginger
  5. 6garlic cloves
  6. 2cloves
  7. 1cinnamon stick
  8. 1bay leaf
  9. to tasteSalt
  10. 1/2 tspRed Chilli powder
  11. 1/2 tspgaram masala
  12. 1 tspdhanya jeera (Coriander cumin)powder
  13. 1 tsp turmeric powder
  14. 3 tbspoil
  15. 1 tbspghee

Cooking Instructions

    Combine turmeric, ginger, garlic cloves and onion in a blender jar and make paste. Take it out and make tomato paste using the same blender. Do not use water to blend.

    Heat oil in a pan. Add cloves, cinnamon stick and bay leaf. Fry them till they leave aroma. Add onion-garlic-ginger paste and fry till the paste changes colour. Add 1 cup green garlic and fry for a minute.

    Add ghee. Now add tomato paste, mix well. Add spices and salt.

    Combine everything well and cook till the mixture oozes oil. Add remaining 1/2 cup fresh garlic in the last stage and then remove from heat. Serve hot.
