Ingredients

  1. 400 gmsMalabar spinach
  2. Diced carrots
  3. Diced potatoes
  4. Diced snake gourd
  5. Diced pumpkin
  6. Diced eggplant
  7. Diced pointed gourd (parwal) potol
  8. Diced Gourd
  9. Diced ridge gourd
  10. 1 tablespoonGinger paste
  11. 1 tablespoonred chili powder
  12. to tasteSalt and sugar according
  13. Panch phoron for mixed spices
  14. Bay leaves and 1 dry red chilli for tempering
  15. to tasteSome green chillies according

Cooking Instructions

    Blanch all the veggies for 10 minutes in hot water. Take a pan heat 3 tablespoon of mustard oil. Add two bay leavess one red chilli and one teaspoon of panch.

    One by one we are going to fry all the vegetables. First we are going to fry the potatoes then all the gourds, ridge gourd snake gourd,gourd,pumpkin and pointed gourd. After that we are going to fry brinjals carrots. Once get fried we will add the ginger paste mix it well. Add the Malabar spinach mix it for another 30 seconds conver the cooking Pan for few minutes then add salt,turmeric,sugar and red chilli powder. Mix it well again cover the pan for 15 minutes please note don't add water

    Because spinach will lose water. Add some green chillies.After 15 minutes add very little water according to your required consistency your pui saag chochori is ready to serve.
