Water spinach is popularly known as kalmi shaak in Bengali. It has a wide range of medicinal benefits. This is the best way to prepare it in the tastiest way as well to keep all the medicinal benefits in tact. Serve it with some steamed rice.

Cooking Instructions

Heat some oil in the wok and fry the bori. Keep them aside.

In the same oil tamper the panch phoran and dry red chillies and saute till the aroma comes out.

Add the brinjal cubed, green chillies, and also add the turmeric and salt.

Fry the brinjals till golden brown in colour.

Add the water spinach and mix them very well.

Cover the wok with a lid and keep it in medium flame.

After 10min, uncover the wok and fry the water spinach in high flame, till the moisture disappears.

Check the salt and add if required. Add some sugar. Let it be a bit sweetish.

Break the bori and add them in the wok. Mix them well. This will give a crunchy texture to the preparation. Don't keep it in the flame for long after adding the broken Bori.

Serve hot.
