Cooking Instructions

Take the rice in a bowl, wash it properly and soak for 30 mins.

In a wide bottomed pan add water then add in little salt, bay leaf, 1 tblspn cooking oil. When it starts boiling add the rice and cook it till the rice is 90%done. Strain it and keep it aside.

In another kadai add 3 tblspn of oil and 1 tblspn ghee, add a bay leaf and 1 tspn cumin seeds. Then add the veggies and fry them for 4 mins. Add the ginger paste and Stir well. Now in a bown take the curd and all the spices and whisk well it so that it become a smooth and lumps free mixture.

Now add this mixture in the kadai and mix well with the veggies. Add little water and cover with a lid. Cook it for 5 mins over medium flame then open the lid and stir.

The veggies should well cooked in this time. Now add the cooked rice and the green chillies. Then mix it properly with gentle hand.

Cover with a lid, make the flame lower and cook it for another 5 mins. Your parwal pulao is ready to serve.
