Ingredients

  1. 6bone in chicken thighs
  2. Olive oil
  3. 3 tspmixed Italian herbs
  4. Salt and pepper
  5. (Creamy bacon, mushroom & thyme sauce)
  6. Olive oil
  7. 2& 1/2 cups sliced mushroom
  8. 200 gchopped bacon
  9. 300 mlheavy cream
  10. 1/4 tspsalt
  11. 1/4 tsppepper
  12. 1 tspgarlic powder
  13. 1 Tbspfresh thyme leaves, chopped
  14. 1 Tbspfresh chopped parsley

Cooking Instructions

    Pre-heat oven to 180*C. In a fry pan on high heat, brown chicken in batches and set aside. When all done- sprinkle with Italian herbs, salt & pepper. Throw in oven for around 25 minutes or until cooked through.

    Meanwhile- fry bacon and set aside.

    Then sauté mushrooms with a little olive oil.

    Return the bacon to the pan along with cream, salt, thyme, pepper and garlic salt. Simmer until sauce thickens slightly.

    Add the chicken to sauce- and serve immediately- with mash or pasta. Enjoy!!
