Vegetarian lentil curry

Together with some fluffy rice and a bit of bread to mop up all the sauce this is a really tasty and filling meal with lots of flavour.

Cooking Instructions

Rinse the lentils and soak in plenty of water for at least 4 hours.

Chop onion and garlic and fry in a bit of oil until they're soft. Add curry powder and cook for another minute.

Add the rest of the ingredients and simmer for about about 30 minutes (check the potatoes and lentils are done).

I love Delia Smith's recipes. This recipe is based on one of her recipes (from her Vegetarian Collection) that I cooked so many times I learned it by heart. It was my husband's favourite meal, but it had loads of ingredients. Now I have less time to make it, I decided to strip it back.
