Ingredients

4 servings
  1. 150 gdried green lentils
  2. 1onion
  3. 1 clovegarlic
  4. 1 tbspcurry powder
  5. 1/2 tspchili flakes
  6. 1 tbsptomato puré
  7. 1 tincoconut milk
  8. 500 mlwater
  9. 1vegetable stock
  10. 2-3potatoes, cut into small pieces
  11. Optional
  12. Peas, carrots, sweetcorn or other vegetables

Cooking Instructions

    Rinse the lentils and soak in plenty of water for at least 4 hours.

    Chop onion and garlic and fry in a bit of oil until they're soft. Add curry powder and cook for another minute.

    Add the rest of the ingredients and simmer for about about 30 minutes (check the potatoes and lentils are done).
