Slow Cooker Curry Chicken

I have tried so many recipes; from the slow cooker to the regular stovetop. None of them were any good. Either the sauce was too watery, too thick, there was no flavor, etc.

As is my MO in life, I decided to do my usual routine and pick & choose from different recipes. My wife and I finally came up with this recipe. We love it and wanted to share it. Hopefully, you will too!

Ingredients

  1. 1 tbspcoconut oil
  2. 2-3 clovesgarlic, minced
  3. 1medium onion, diced
  4. 1 1/2 cupschopped carrots
  5. 1 tbspfresh ginger, minced
  6. 1 (13.5 oz)can of coconut milk
  7. 1 (6 oz)can of tomato paste
  8. 2 tbspflour
  9. 2 tbspcurry powder
  10. 2 tbspgaram masala
  11. 1 tspchili powder
  12. 1-2 tspground black pepper
  13. 2-3 lbsboneless, skinless chicken breasts or thighs, cut up into 2 inch pieces

Steps

  1. 1

    Heat coconut oil in a medium pot over medium heat. Add garlic and onion, and sauté until onions become translucent, about 5 minutes.

    Then add the carrots and ginger into the pot, cook for about 5 minutes. Stirring occasionally.

    In a medium bowl, add coconut milk, tomato paste, flour, curry powder, garam masala, chili powder, and pepper. Stir until well combined and slightly thickened. Transfer to the pot and cook everything together for another 5 minutes.

    Put the chicken into the slow cooker, then pour the curry sauce on top of it. Stir together. Close the lid, put the temperature to low, and set the timer to six hours.

    After three hours, take off the lid, stir for about a minute, then replace the lid and let cook for another three hours.

Since I was a kid, I remember sitting in the kitchen to watch and/or help my parents. As I grew up, I decided to try their recipes and experiment with different recipes. Some were very good and I re-make them all of the time. Others? Yeah, I never tried them again. All of the recipes that I post are the very good ones.Also, while growing up, my pops suffered from high blood pressure, so my mom stopped adding sodium. Since that is how I was raised, all of the dishes that I post do not have any extra sodium added to it. A lot of friends and family who try my recipes, either do not notice nor miss it. But in no way am I saying not to add salt if you use my recipes. If you want to add it, then go for it.In closing, I hope that you enjoy my recipes. If you use any, then please post pictures. Enjoy!

how much coconut milk and tomato paste? the ingredients list is missing the quantities needed.
