Ingredients

  1. 4 tbspoil
  2. 2onion, chopped
  3. 8 clovegarlic, finely chopped
  4. 2 tspturmeric
  5. 2 tspground cumin
  6. 2 tspmild or medium curry powder
  7. 8whole green cardamom pods
  8. 4 tbsptomato paste / puree
  9. 200 mlvegetable stock
  10. 400 gramscanned lentils, drained
  11. 200 mlfull fat coconut milk

    This curry is nice served with flat breads. Use shop bought or make homemade from my recipe

    Heat the oil in a saucepan and fry off the onions and garlic gently until softened

    Stir in the turmeric, cumin, curry powder and cardamom pods. Cook a further 2 minutes

    Stir in the tomato puree, stock and lentils

  5. 5

    Simmer for 5 minutes

    Warm the flat breads while you stir the coconut milk into the curry

    Remove the cardamom pods before serving
