Indian Railway Station Omlette

It’s 2am and I lay awake waiting for Nagpur station to get a fix of the legendary station omelette whose aroma would waft was the train passed by. I would pray that my coach does not stop a mile from the omelette stall. In any case, a sprint to get the omlette and a chai; watching the guy whip out omlette after omlette; sandwiched between two slices of white bread and wrapped in a newspaper plus a squirt of ketchup. In 15 minutes between the sprint back to the coach with a sandwich and tea; gobbling down the treat and gulping down the watery tea. Memories remain alive through these simple recipes. Enjoy

Ingredients

  1. 2Eggs
  2. 2 tablespoonsfinely chopped onions
  3. 1green chilli chopped
  4. 1 pinchsalt
  5. 1 pinchpepper
  6. 1 pinchred chilli powder
  7. 1/2 pinchturmeric
  8. 1 pinchgaram masala or curry powder
  9. Small slice of salted butter (I use Amul)

Cooking Instructions

    Collect all ingredients. Pretty straightforward

    Diet version means less butter; but flipping can be challenging.

    I never claimed to be a chef. But it tastes pretty good. Eat with white bread and ketchup
