Cooking Instructions

Wash the Potato and chop the onions. Peel the potato and cut into 1” squares.

Smear the fish head after wash with turmeric powder and salt and in a pan in heated mustard oil fry the fish heads. Set aside

Wash the rice and drain. Spread the rice on a plate
- 4
In a wok heat oil & ghee and add chopped onions and fry till brown in colour. Add rice and fry till slightly brown but keep stirring so that it doesn’t burn in the bottom

Add ginger paste, turmeric powder and chill powder. Stir. Add salt. Add potatoes and break the fish heads and add to the rice. Stir very well.

Add enough water so that rice would be cooked and potatoes too. The water should be absorbed. Cover but keep stirring in between

Garnish with garam masala powder and little ghee. Serve hot

A local rice variety called Gobindo Bhog is used in this recipe, but in the absence of it, I used basmati rice. So let me share a vegetarian version made with cauliflower and following the same method. It turned out real yummy. The quantity of rice can be adjusted according to individual preference. I gave a tempering of bay leaves, whole garam masala and cumin seeds in mustard oil. The end product was flavoured with garam masala powder and ghee for some lingering aroma. This stem can be turned into various delicious recipes. So here comes 'Thor Muri Ghonto', which means Banana Stem cooked with Rice. Muri Ghonto recipe is usually prepared with Fish Head and some Rice. However, I substituted fish head with Banana Stem. This fusion dish turned out very yummy. I gave a tempering of bay leaf, cumin seeds and whole garam masalas and cooked with cashew paste, milk and other spices for a creamy texture. The medium of cooking was of course mustard oil and I finished it off with some garam masala and ghee to enhance the flavour. It is best relished with steamed rice, chapattis or parathas.
