Ingredients

  1. 1medium cauliflower roughly chopped
  2. 1white onion roughly chopped
  3. 1 stickcelery roughly chopped
  4. 3medium potatoes roughly chopped
  5. 3 clovesgarlic crushed
  6. 1thumb sized piece of ginger chopped
  7. 1 tspground coriander, turmeric, cumin,
  8. 1 tbspMadras powder
  9. 1 ltrplant based vegetable stock
  10. 200 mlplant based cream
  11. S&P

Cooking Instructions

    Cook down the onion over a medium heat for 5 mins.

  2. 2

    Add the potatoes & cauliflower. Continue the process for 10 mins.

  3. 3

    Add the spices, garlic & ginger cook for a further 5 mins.

  4. 4

    Add enough stock to cover the vegetables & simmer until tender.

  5. 5

    Blitz well until smooth & bring back to a simmer. Add the cream, season & serve.
