Kimchi Fried Rice | Kimchi Bokkeumbap

One of my InstaFam, @rentalman2, suggested that I make Kimchi Fried Rice with the homemade Kimchi. He told me that this is one of this favorite food. To be honest, I am not a fan of rice (yes, I know I should be banished or outcast from my Asian society for saying that), but I am so glad that I decided to take his advice and give it a shot.
As much as I know, overnight cooked rice is the best for making any fried rice. Don't worry, no colander. Just using a rice cooker to cook the rice. If you like rice and you are not Asian, please do yourself a favor, go get a rice cooker. It is very affordable. You can also cook any rice with ease without any draining or washing rice in a colander. LOL!
I am not using any wok for this recipe because I know most non-Asians do not own any wok in their kitchen. But most people at least have a skillet or a pan right? As shown in my recipe video, there isn't any fancy tossing too. I am showing you how to get it done properly as simply as I can. If you are a vegan, you can leave the egg out. If not, you can top your kimchi fried rice with a sunny side up or even a fried egg. Anyway, I hope you will give this recipe a try and let's hope Uncle Roger approves this.

Cooking Instructions
- 1
You can check out my previous post for the kimchi recipe.
- 2
Wash and drain the rice 3 times.
Add water to submerge the rice with about a knuckle depth.
Cook the rice in a rice cooker as per the manufacturer's instructions.
Once the rice is cooked, fluff the rice.
- 3
You should have about 3 to 4 cups of cooked rice.
Keep chilled in the fridge overnight.
The next day, drain kimchi to remove the excess juice. Reserve the juice.
*You can do this by squeezing or hang on a sieve.*
- 4
Finely chop the drained kimchi.
Transfer into a bowl. I also reserve some of the kimchi for garnishing.
In a skillet over medium heat, drizzle 1.5 TBSP of sesame oil.
Once the oil is heated up and at the smoking point, add in the chopped kimchi.
Saute for a few seconds.
- 5
Add in garlic and saute until aromatic.
Add in the overnight cooked rice.
Break up any large clumps of rice with a spatula.
Saute until well combined.
Add in the kimchi juice and chili paste.
Saute until well combined, making sure every grain of rice is well coated.
Drizzle in the remaining sesame oil.
Taste and adjust seasoning with salt and mushroom powder.
- 6
Give it a final saute.
Transfer onto a large plate.
You can garnish with scallions, nori and sesame seeds at this stage and serve at this point for a vegan-friendly option.
Or you can cook 2 sunny side ups and serve on individual plates as shown in the photos.

Kimchi Fried Rice Kimchi Fried Rice
This is a mild kimchi fried rice that can even be eaten by slightly older children. If you love your kimchi extremely spicy though, check out.You can make char siu at home too using.-Make sure to heat the pan well before stir-frying.-Because the rice contains a little kimchi juice, it will be a little moist but try and give it a crumbly finish if you can.-Warm the rice first if you are using it from the fridge. Simple & Tasty Kimchi Fried Rice Simple & Tasty Kimchi Fried Rice
This is a recipe that I thought up on a whim. You don't have to chop up the kimchi, you can use it as-is. If you do that then you don't have to add any juice back in afterwards. When you're stir-frying, some of the juices are likely to spit, but if you don't mind that, you can make this dish really quickly and cut the cooking time a little. Bacon Kimchi Fried Rice (김치볶음밥) Bacon Kimchi Fried Rice (김치볶음밥)
Though my mom did most of the cooking when we were kids, every once in a while, my dad would take to the kitchen to make one of his three signature dishes which were:1) kimchi jjigae,2) kimchi fried rice, and3) kalbi.Well, one of those plus a huge mess.Of the three, I think his kimchi fried rice was my favorite. Maybe it's because I remember sitting at the bapsang with nothing but a huge wokful of fried rice and as many spoons as there were people eating, and just digging in until we were all stuffed. Definitely because it was just so tasty - the simple deliciousness of pork belly or bacon, and sauteed and slightly caramelized ripe kimchi, all tossed with yesterday's rice and a little bit of sugar, soy sauce and gochujang to make it even spicier.Delicious memories! As with most fried rice recipes, stale rice works best. So the next time you have Chinese, Thai, Korean or Japanese takeout, you might want to save your leftover steamed rice to make this dish later in the week. Also, while some people like to make their kimchi fried rice with fresh kimchi, I personally like it much, MUCH, better with the ripe, sour stuff. x -

3 years ago my daughter and I took a trip to South Korea 🇰🇷 We spent a lot of time tasting different kinds of ‘street food’. Bacon Kimchi Fried Rice was one of our favorite ones. The sourness of the kimchi combined with the crispy bacon is just perfect! 😋#heirloomIf you like my recipes, please follow my Instagram @jenscookingdiary @jenscookdineandtravel jenscookingdiary
