Roasted leek tops with vinaigrette

Leek tops tend to be almost always discarded, when a recipe calls for leeks, they normally specify to use the white parts. Many times grocery stores sells leeks already without its green leaves and more than one time I have been asked if I wanted them to me removed before taking them home.
With this recipe I have decided to give them the attention they deserve and make them bright! 💖

Ingredientes

  1. Leek tops
  2. 4tbls of olive oil
  3. 3tbls balsamic vinegar
  4. Salt and pepper
  5. 1/3of red onion or spring onion

Paso a paso

    Pre heat the oven at 180ºC
    - Clean the leek tops with cold water and cut them in aprox 5cm
    - Drizzle with olive oil, black pepper and salt and place the leeks in the oven for aprox 20 minutos, you will see leek tops are ready when they become tender.

    To make the vinaigrette cut 1/3 of spring onion (or red onion, or even a piece of the leek) and mix with 4tbls of extra virgen olive oil, 3tbls of balsamic vinegar, a pinch of salt and black pepper.
