Ingredients

  1. 4eggs
  2. 2 tablespoonsolive oil
  3. 1 canchopped tomatoes
  4. 2medium onions chopped
  5. 2garlic cloves crushed
  6. 1green pepper deseeded and sliced
  7. 1small bunch parsley, roughly chopped
  8. 1green chilli deseeded and sliced
  9. Pinchsalt
  10. Pinchblack pepper

Cooking Instructions

    Heat the oil in a heavy-based frying pan. Stir in the onions, garlic, peppers and Chilli. Cook until they begin to soften. Add the tomatoes and salt, mixing well. Cook until the tomatoes juice has reduced, season with black pepper.

    Using a spoon, create 4 pockets in the tomato mixture and crack the eggs into them. Cover the pan and cook the eggs over a low heat until just set.

    Sprinkle the menemen with parsley and serve from the frying pan
