Chayotes with Eggs.
Super simple and light. My family love it. :-)
Steps

Cut chayotes into quarters and boil it, adding 2 teaspoons of salt to the water until tender pricked with a fork to see when it's ready.

Remove from the water, peel and cut into small cubes.

Heat a tablespoon of oil over medium heat. Cook onions stirring them until they become transparent. Add the peppers, tomatoes, garlic. Cook stirring for half a minute.

Add the chayotes, cook over low heat until heated through. Add eggs, cook and stir until eggs curdling. Add the cilantro and season with salt and black peper to taste.

Serve with white rice and beans.
