In a large pot sauté your Italian sausages until no pink remains.........You can add a little bit of olive oil if sausages are sticking to your pot......

Sauté your sliced onion, green pepper and minced garlic with sausages until veggies are tender.......

Add to pot your beef stock, diced tomatoes, oregano, Italian seasoning, black pepper and frozen veggies, bring to a boil......

Cover soup slightly with a lid and cook on low / medium heat for 30 - 40 minutes, stirring occasionally........

Serve topped with Parmesan cheese and enjoy 😉!!
