Ingredients

  1. Sauce
  2. 3tblsp oil
  3. 2 cmpiece of ginger, peeled and chopped
  4. 1large garlic clove, chopped
  5. 3onions, chopped
  6. 250 mlwater
  7. 4tomatoes, chopped
  8. 2 tspchopped fresh coriander
  9. 1 tspground cumin
  10. 1/2 tspturmeric powder
  11. 1/4 tspchilli powder
  12. 1/2 tsppaprika
  13. 1/2 tspgaram masala
  14. 2bay leaves
  15. 1/2 tspsalt
  16. 4cardamoms, broken slightly open
  17. Rest of dish for Chicken Balti
  18. 1 tbspoil
  19. Onion, chopped
  20. 2 cmpiece of ginger, peeled and grated
  21. 3garlic cloves, grated
  22. Chicken fillets
  23. Chopped fresh coriander

Cooking Instructions

    Heat oil in pan, add ginger and garlic. Stir.

  2. 2

    Add the onions and fry till they are translucent.

  3. 3

    Add the water and bring to the boil.

  4. 4

    Add the rest of the 'sauce' ingredients, cover and simmer on a low heat for 30 mins.

    Remove and discard the bay leaves and cardamom pods and liquidise the rest.

    Sauce can now be used straight away or kept in fridge till needed.

    To prepare the rest of the dish, heat oil in pan. Add onions and fry gently until they turn brown.

    Add ginger and garlic. Stir well and cook for a minute.

    Add chicken, cook till sealed (starting to turn white).

  10. 10

    Add the balti sauce - if its been in the fridge, warm it in the microwave first.

    Turn heat to low and cook for 15 minutes, till chicken is cooked through.

    Stir in the coriander and serve with basmati rice and naan bread.
