Ingredients

4 servings
  1. 6medium sized golden Yukon potatoes (roughly 2lbs)
  2. Water soak
  3. Soak potatoes in water for at least 30 minutes
  4. Enough water to cover potatoes
  5. Marinade
  6. 1/3 cuplemon juice
  7. 5 clovesgarlic minced
  8. 1 tablespoonoregano
  9. 2 teaspoonssalt
  10. 1/2 cupOlive oil
  11. 1/2 cupchicken stock
  12. 1.5 teaspoonsDijon mustard

Cooking Instructions

    Cut Yukon gold potatoes in half and soak them or cover with water for at least 30 minutes

    Chop finely or use garlic mincer and put into bowl with these ingredients, 1/3 cup lemon juice, 1 tablespoon of oregano, 2 teaspoons of salt, 1/2 cup olive oil, 1/2 cup chicken stock,1-1/2 teaspoons Dijon mustard.

    Pat potatoes dry and brush/ cover with marinade. Cook at 350 in airfryer for 20 minutes on just the airfryer rack, every 10 brush with marinade then turn over and brush more marinade on. Cook for another 15 -20 minutes in airfryer pan which bastes the marinade into potato. Ps these work better with Yukon gold but these ones were made with yellow potatoes.
