Ingredients

  1. For making poori
  2. 1 bowlwheat flour
  3. 1Boiled potato
  4. 2 tbspchopped palak/ spinach
  5. 1/4 tspcarom seeds
  6. 1 tbspcooking oil for moyan
  7. as neededWater
  8. For making Chana Masala jhor
  9. 1 bowlBlack chana
  10. 4 bowlwater
  11. 1onion chopped
  12. 6-8garlic pods chopped
  13. 1 inchgrated ginger
  14. 2Green chillies
  15. 2tomatoes chopped
  16. to taste salt and red chilli powder
  17. 2Whole black pepper seeds
  18. 2 tbspcooking oil
  19. 2 tbspchopped coriander leaves
  20. 1 tspkitchen king masala
  21. 1 tspturmeric powder
  22. as neededCooking Oil for deep frying poorie

Cooking Instructions

    Mash boiled potatoes in a mixing bowl. Add wheat flour, chopped palak, salt, carrom seeds, turmeric powder and cooking Oil for moyan and mix well. Now knead a soft dough by adding water slowly and keep aside for 15 minutes.

    Take a portion of dough and make balls. Roll it with the help of rolling pin. Likewise roll all puries.

    Heat cooking oil in a wok and deep fry puries till golden brown colour. Remove it in a plate.

    Wash and Soak black chana for 4 hours. After 4 hours put it in pressure cooker and add salt and pressure cook for 5 minutes after first whistle. Let pressure releases automatically and then transfer it in a bowl.

    Heat cooking oil in pressure cooker. Add cumin seeds and when cumin seeds splutter put finely chopped ginger, green chilli and garlic. Saute for 30 seconds. Add chopped onion and whole masala. Cook on low flame till it turn golden brown.

    Add chopped tomatoes and cook on low flame till it turn mushy. Add salt, red chilli powder, turmeric powder, coriander seeds powder and chana masala and mix well and cook till oil leaves the sides.

    Add black chana in it and mix till all masala coated on it. Add water and place the lid and cook for 5 minutes after first whistle. Switch off the flame and let pressure releases automatically.

    Open the lid and garnish it with chopped coriander leaves.

    Serve black chana jhor with Aloo Palak Puris.
