Ingredients

  1. 1 cupwheat flour
  2. 1/2 tspcumin seeds
  3. as per tasteSalt
  4. 1/2 tspCarom seeds
  5. 1 1/2 tbspPure ghee
  6. 3 tbspspinach paste
  7. As RequiredWater if needed
  8. For fillings
  9. 2boiled potatoes
  10. 1/2 tspchat masala
  11. as per tastesalt
  12. ½ tspRoasted cumin powder
  13. ½ tspRed chilli flakes
  14. ½ tspLemon juice

Cooking Instructions

    Add all the ingredients except spinach and water. dry mix properly. keep rubbing with yr palms or massage ghee with the flour.
    Add spinach paste (it should be thick in consistency). mix it properly. try to knead dough without adding water. make a little hard dough from a normal dough. knead at least 5 min to make it smooth.
    Keep it aside for rest. (10 minutes).

    Method: Cut potatoes inleavell pieces. Add all the ingredients and give a good mix.

    Katori preparation

    Divide dough into 4 equal piece
    Make balls, roll like a Poori
    Cut with a lid for a perfect shape.
    Put it on the bottom of the steel glass from the outer side to give a shape of a Katori.
    Heat ghee in a pan, keep the glass in oil from where we stick the dough.
    Keep flame medium to low. pour oil on the Katori.
    After few minutes the glass will leave the Katori. Take out the glass.
    Pour some hot oil in Katori, so that it will cook from inside.

    How to assemble
    Fill katori with potato chat and enjoy with green chutney.

    For Nimkies

    Gather the cutting of dough (remaining cutting of poories). Make a ball. Roll out and cut size accordingly of yr choice.
    Fry on medium to low flame.
    Once done take out in a bowl.
    Add red chili powder. roasted cumin powder...chat masala powder and two drops of oil. Toss it.
