Once I found a recipe for Chili con Carne (Beef Chili) at Whole Foods. I had never made chili before. I prepared that chili and liked it, but over the years I made changes that made me like it even more. When hosting for vegetarian friends, I replace the ground beef with diced tempeh.

Ingredients

1 hour + time for soaking and cooking beans
6 servings
  1. 1 cupdried kidney beans
  2. 1 cupdried black beans
  3. 2 tablespoonsolive oil
  4. 1large onion, chopped
  5. 2 clovesgarlic, minced
  6. 2 tablespoonschili powder
  7. 2 teaspoonsdried oregano
  8. 1 teaspoonground cumin
  9. Pinchcrushed red pepper
  10. 2 tablespoonstomato paste
  11. 2 poundslean ground beef, turkey, chicken, or diced tempeh
  12. 1 (15 ounce)can of tomato sauce
  13. Dashkosher salt
  14. 1 cupchopped cilantro
  15. Optional toppings: hot sauce, sour cream, Cheddar cheese, tortilla chips

Cooking Instructions

1 hour + time for soaking and cooking beans

    Wash and rinse beans separately. Soak them overnight.

    Boil beans until cooked but firm. Save 1/2 cup of each cooking water.

    In a Dutch oven sauté onion for 5 minutes. Add garlic and cook for 2 minutes.

    Add herbs, spices and tomato paste. Cook for 1 minute, stirring constantly.

    Add beef and cook, breaking lumps, until there’s no more pink/red meat.

    Add tomato sauce, both cooking waters, beans and salt. Bring to a boil, then lower heat to a low and simmer for 30 minutes.

    Turn off heat. Add cilantro, stir and let it sit for a few minutes before serving. Serve with hot pepper sauce, a scoop of sour cream, shredded Cheddar and/or tortilla chips if desired.
