Beef Chili

Once I found a recipe for Chili con Carne (Beef Chili) at Whole Foods. I had never made chili before. I prepared that chili and liked it, but over the years I made changes that made me like it even more. When hosting for vegetarian friends, I replace the ground beef with diced tempeh.

Beef Chili

Cooking Instructions

Wash and rinse beans separately. Soak them overnight.

Boil beans until cooked but firm. Save 1/2 cup of each cooking water.

In a Dutch oven sauté onion for 5 minutes. Add garlic and cook for 2 minutes.

Add herbs, spices and tomato paste. Cook for 1 minute, stirring constantly.

Add beef and cook, breaking lumps, until there’s no more pink/red meat.

Add tomato sauce, both cooking waters, beans and salt. Bring to a boil, then lower heat to a low and simmer for 30 minutes.

Turn off heat. Add cilantro, stir and let it sit for a few minutes before serving. Serve with hot pepper sauce, a scoop of sour cream, shredded Cheddar and/or tortilla chips if desired.

Beef & Chorizo Chili Beef & Chorizo Chili
1st chili batch of the year and decided to do something a little different than our norm. Used up another pound of the awesome homemade chorizo I had in the freezer and went with 1/4 cup of my own homemade chili seasoning (see my "chilly chili seasoning" recipe).
