The most fondest memories of my childhood has been connected with food. I grew up in Calcutta the City of Joy. My home and that is the place where my heart shall always be. I might be away now but my eating habits are absolutely kolkatan...
And one such food that takes me back to my childhood is EVERYONE'S favourite " PUCHKAS" Puchkas are the spicer versions of pani puri found all over India and we Kolkatans madly love it !
So at my place to give everyone the feel of being 'home', I usually set up a stall myself and become the puchkawala and live the fondest memories accosiated with "Puchkas"

Ingredients

  1. Ingredients for Puri
  2. 1 cup roasted sooji
  3. 1/8 tsp Baking Soda
  4. 1 tbsp maida
  5. 1/4 tsp Salt
  6. 1 tsp oil
  7. As neededWater
  8. Ingredients for Pani
  9. as requiredHandful mint leaves
  10. HandfulCoriander leaves
  11. 2green chillies ground to paste
  12. 1/2 tsp Red chilli powder
  13. 1 tsp Cumin powder
  14. 1 tsp Rock salt
  15. 1 tsp Chaat Masala
  16. 1 1/2 tbsp tamrind pulp
  17. to tasteSalt
  18. As requiredMix 4tbspn imli, gur chutney with 1 cup water (for sweet water)
  19. Ingredients for Potatoes filling
  20. 2 boiled potatoes (mashed)
  21. 1/4 cupboiled kala chana
  22. 1/2 tsp Red chilli powder
  23. 1 tbsp rock salt
  24. 1/2 tsp cumin powder
  25. 1 tsp green chilli paste
  26. as required Coriander leaves (finely chopped)
  27. as per taste Salt
  28. 2 tbsp already pepared pani puri water

Cooking Instructions

    In a parat bring sooji, baking soda, maida, oil and salt together. Add some water and Knead a soft dough.
    The sooji will absorb water and it will get firm. Keep kneading the dough until elasticity is formed. The dough should be such that when you start rolling it out the outer edge should not have cracks. So knead very well.

    Cover the dough with a mislin cloth and keep it aside for half an hour.

    Now make small balls and start rolling out the puris. The puris should be thin and evenly rolled out.

    You can also roll out into a big disc and then cut them out with the help of a cookie cutter.

    Fry the puris in small batches in a medium hot oil until golden brown colour.
    Sometimes the puris might not puff, don't worry use them to make masala puri or chur mur chaat.

    Cool them down and store them in an airtight container.

    For the pani combine all the ingredients together in a mixer grinder and grind to a coarse paste. Now tranfer into a big vessel, add 2 cups of water. Adjust the salt and other spices accoring to taste.

    For the Potatoes filling combine all the ingredients nicely and mix everything well. Also add 2 tbspn of the pani puri water. This gives it an amazing flavour.

    Now when all the ingredients are ready assemble them together. Tap the puri at the centre lightly, fill with potatoes filling and then dip it in the sweet chutney and then the spicy tangy pani puri water.
    Eat immediately.

    Njoy this Calcutta style puchka/ pani puri and relive your childhood.
