Ingredients

2 hrs
2-4 servings
  1. 1spaghetti squash
  2. 1 boxspaghetti noodles
  3. 1 jarprego mushroom spaghetti sauce (or your favorite!)
  4. 1 bagfrozen or fresh meatballs (can use vegan ingredients)
  5. 1small green pepper, sliced julienned
  6. 1small red pepper, sliced julienned
  7. 1small zucchini, shredded thin
  8. 1small yellow onion, diced
  9. 1 tspsalt
  10. 1/2 tsppepper
  11. 1 tbspfresh or dried basil
  12. 2pats garlic butter
  13. 1 tbspolive oil
  14. 1 tbspbrown sugar
  15. 2 tbspgrated parmesan cheese
  16. 1/2 cupshredded cheddar cheese
  17. 1/2 cupshredded mozzarella cheese

    Cook the squash: Preheat the oven to 350°. Cut the spaghetti squash in half lengthwise. Scoop out the seeds. Rub ¼ tablespoon of olive oil on each half and sprinkle with ¼ teaspoon of salt and ⅛ teaspoon pepper. Add a pat of garlic butter to the center of each half. Place in the oven, flesh side up, and roast for 40-60 minutes or until flesh is softened. Also, boil your pasta water and cook your noodles.

    Meanwhile, start your sauce in a medium sauce pan and add meatballs, vegetables, brown sugar, seasonings, & 1 tbsp of parmesan cheese. Cover & Simmer.

    Using a fork scrape the insides of the squash to make strands. Add about 1 cup of spaghetti noodles to each half and toss to mix together.

    Add a layer of half the peppers and half the cheeses on top of pasta/squash mixture.

    Cover with pasta sauce and meatballs.

  6. 6

    Add final layer of remaining peppers & cheeses.

    Top with sliced or shredded green onion or oregano.

    Return to oven for 30 minutes. Or until cheese is melted to your preference.👌👍👍👏🤤
