  2. 3 stalksRipe plantain
  3. 4 piecestomatoes
  4. Scotch bonnet
  5. Sweet peppers
  6. Onions
  7. cubesSeasoning
  8. Salt to taste
  9. Curry
  10. Thyme
  11. Vegetable oil

Cooking Instructions

    Peel and slice plantain round shape and deep fry with veg oil till golden brown

    Slice tomatoes, peppers and onions, fry with little oil in a frying pan, add seasoning cubes, curry, thyme and salt for 2mins.

    Whisk eggs, add the whisked eggs to the fried tomatoes, give a quick stir. Arrange the fried plantains in circles. Covered allow to cooked for 8-10 mins on low heat.

    You can also use a double sided pan to cook the Frittata to enable you turn each side
