Vegetarian Mexican Fried Rice is made with a lovely chili garlic paste made from dry Kashmiri red chilies and fresh garlic, and with fresh vegetables that is available in your refrigerator. The peppy taste and strong aroma of chili garlic paste along with crunch of veggies and tanginess from tomato makes this dish a treat to your palate.

Serve it as a main dish or along with any other Mexican dish.

Ingredients

3 persons
  1. 2 tbspolive oil
  2. 1 cupBasmati rice/ 3 cups cooked rice
  3. 1medium size onion
  4. 1large tomato
  5. 1/2capsicum, sliced
  6. 5garlic cloves
  7. 4dry Kashmiri red chili
  8. 1 cupmixed vegetables, Cooked and crunchy

Cooking Instructions

    Wash and soak basmati rice for 30 minutes. Add to boiling water with salt and cook until done. Drain the water completely and let it cool.

    Roughly chop garlic cloves and grind it coarsely along with red chilies.

    In a wok, heat oil and add in sliced onions and sauté for a minute. Add in chili garlic paste and sauté until aromatic.

    Add in chopped tomatoes, sliced capsicum and cook until tomatoes are soft and mushy. (tomatoes can be replaced with tomato purée or tomato paste). Add water if required to cook tomatoes. Add in cooked vegetables and salt for vegetables, mix and cook for 2 minutes stirring occasionally. (I used green peas, carrots and beans. Add in sweet corn too.)

    Add in rice, mix gently and cook for 2-3 minutes stirring occasionally so flavors combine well.

    Mexican Fried Rice is ready to serve hot.
