Break up any clumps of cold, cooked rice with a fork. Heat 1 tbsp oil in a wok or large skillet over medium-high heat. Cook shrimp 1–2 minutes per side until pink. Remove and set aside.

Add a bit more oil if needed. Pour in beaten eggs and scramble quickly. Remove and set aside.

Add garlic, peas, and carrots. Stir-fry for 2 minutes. Add another tbsp oil and toss in the rice. Stir-fry for 2–3 minutes until hot and slightly toasted.

Add soy sauce, oyster sauce, and sesame oil. Mix well. Add shrimp, eggs, and green onions back in. Toss everything together for 1–2 minutes. Serve hot, garnished with extra green onions if desired.
