You can make an easy Thai dish with dried udon noodles even if you don't have sen lek (Thai rice noodles)!

You can use white sugar instead of brown sugar if you want. It's more authentic to add bean sprouts or atsuage (thick fried tofu), but it's also tasty with the crisp onion. Recipe by Wa Station

Ingredients

  1. 100 gramsDried udon noodles
  2. 4Shelled shrimp
  3. 2bunches Garlic chives
  4. 1/4Onion
  5. 1 tbspDried shrimp
  6. 1Egg
  7. 2 tspOyster sauce
  8. 1 tbspFish sauce
  9. 2 tspLemon juice
  10. 1 tspBrown sugar
  11. 1 dash★ Salt
  12. 1 tbspVegetable oil
  13. 1/16Lemon (cut into wedges)

Cooking Instructions

    Preparation: cut the garlic chives into 5 cm pieces and slice the onion finely. Make the scrambled egg. Mix the ★ ingredients.

    Boil the dried udon noodles for 4 minutes. Rinse in cold water and drain .

    Heat the vegetable oil in a frying pan. Stir-fry the shrimp until their color changes. Then add the noodles, dried shrimp and ★ ingredients and mix everything together. Cook for 1 minute.

    Add the scrambled eggs, the onion and the garlic chives and stir lightly. When the onion has cooked lightly, serve on a plate with the lemon wedges.
