Sirloin Steak with Lentil Salad

  1. Lentil Salad
  2. 2000 mlWater
  3. 125 mlDried Black Lentil
  4. 125 mlDried Brown Lentil
  5. 125 mlDried Red Lentil
  6. 125 mlSplit Peas
  7. 4diced Carrots
  8. 1Bay Leave
  9. 5 mlDried Thyme
  10. 2,5 mlSalt
  11. 15 mlDijon Mustard
  12. 180 mlOlive Oil
  13. 60 mlRed Wine Vinegar
  14. 1finely chopped Red Onions
  15. 20 mlDried Tarragon Leaves
  16. 2,5 mlSalt
  17. 2.5 mlBlack Pepper
  18. Sirloin Steak
  19. 1 kgSirloin Steak
  20. Olive Oil
  21. Salt
  22. Black Pepper

Cooking Instructions

    For Lentil Saled:
    Place the water in a large Dutch Oven, cover and bring to a boil. Add washed Lentils, Peas, Carrots, Bay Leave, Thyme and Salt. Cover and simmer for 20 to 25 minutes. Drain and remove Bay Leave.

    In a large bowl whisk together the Mustard, Oil and Vinegar. Add Lentil mix, Onions, Tarragon, Salt and Pepper. Blend well.

    For the Sirloin Steak:
    Heat skillet over medium high heat until very hot.

    Rub Steaks with Olive Oil. Season with Salt and Pepper.

    Grill Steaks to preference. Rest for 5 minutes and serve with Lentil Salad.
