Cooking Instructions

To make the chili oil. Heat a large pan over medium heat. Add the vegetable oil, the garlic, sea salt and chili flakes. Stirring occasionally for about 5-6 mins. Remove and carefully transfer the chilli oil to a heat proof bowl or glass mason jar.

Making sauce, combine the dark and light soy sauce, hoisin sauce, honey, vinegar, peanut butter, sesame oil and about 4-5 tbsp of water in a bowl. Mix well and leave it aside.

Cook your preferred egg noodles according to package directions. Drain and set aside. To the pot used to cook the noodles, cook your minced chicken or pork. Break them up while cooking, once cooked, drain off water and keep the meat aside.

Resemble: add noodles in a serving bowl, add minced chicken or pork, add chilli oil and sauce that you make on no.2. Sprinkle some spring onions. Mix well before eat. Enjoy!!

I always buy 3-packs of yakisoba noodles, but if I make 2 servings there's always 1 pack left over. When I was thinking of ways to use up the leftover pack, I tried making sobameshi, which is a regional speciality. 1 pack of noodles and 1 bowl of rice makes 2 servings - very economical.You can make this with frozen noodles. Just chop up while the noodles are still half frozen. Use up any bits of leftover noodles this way.
