Ingredients

  1. cubesPotatoes, diced into
  2. Handfulfresh coriander chopped
  3. 5garlic cloves crushed
  4. 1 teaspoondried coriander (powder) - if not available, just add more fresh coriander
  5. 1 teaspoonchili paste and/or cayenne pepper, or hot paprika (optional)
  6. 1small red chili 🌶, very thinly sliced and deseeded
  7. Salt
  8. Olive oil

Cooking Instructions

    Some people deep fry the potato but I prefer to bake it. Place on a baking tray, add a drizzle of olive oil and bake for around 30-40 minutes until soft. The put under the Grill for a few minutes until slightly gold and crispy

    In a pan, add more olive oil, sautee the garlic, fresh and dried coriander, chili paste, cayenne pepper and red chili pepper 🌶

    Add the potato cubes to the garlic and coriander, toss until all potatoes are coated with the mixture and cook for 1 more minute to combine the flavors well! Finish with another sprinkle of paprika or cayenne pepper if you want and serve with pita bread 🫓
