Spicy and Sour Chinese Potato Salad
This spicy and sour Chinese potato salad is a refreshing and flavorful dish with a satisfying crunch. It’s quick to make—just 15 minutes from start to finish—and works great as a side dish, appetizer, or light snack. Every time I bring this to a gathering, it’s always the first dish to disappear! Cooking Instructions

Peel the potatoes and cut them into thin strips.

Rinse under cold water three times to remove excess starch, then drain.

Bring a pot of water to a boil and add 1 tbsp vinegar. Add the potato strips to the boiling water and cook for about 20 seconds. Drain the potatoes and rinse them under cold water to stop the cooking process. Place them in a salad bowl.

Combine minced garlic, salt, sugar, vinegar, soy sauce, sesame oil, and homemade chili oil. Stir until the sugar and salt dissolved.

Add chopped scallions, fresh red chili pepper, and cilantro (if using).

Pour the dressing over the potatoes. Gently toss everything until evenly coated. Cover and refrigerate for at least 30 minutes to let the flavors meld. Enjoy!
