I cooked with my Lebanese colleague @Zeit_Zeitoun and she shared her recipe with us.

And this time, we used an air fryer. The result was perfect and it's definitely healthier with less oil used. This recipe is now my big favourite!😍

  2. 1 table spoonOlive oil
  3. 2table spoons Olive oil
  4. 3Garlic cloves
  5. 1 bunchCoriander leaves (chopped)
  6. 2Dried chili
  7. 1 tea spoonCoriander powder
  8. 1 table spoonLemon juice
  9. 1/2 tea spoonPaprika powder

Cooking Instructions

30 mins
  1. 1

Peel the potatoes, rinse well and cut into 3 cm cubes. Soak in water for a while if you have time. Place them in a bowl and toss the potatoes with olive oil. Make sure that the potatoes are well coated in oil.

  2. 2

Wash coriander leaves and cut them into small pieces.

  3. 3

Place in the air fryer basket(I'm using a Ninja brand), choose "air fryer" mode, set at 200°C for 20 minutes. Once in a while when cooking, open the basket and flip the potatoes.

Heat some olive oil in a pan, stir fry chopped garlic and dried chili until fragrant. Add coriander powder and lemon juice.

  5. 5

    Add chopped coriander leaves.

  6. 6

Add cooked potatoes and mix them and cook for few minutes.

  7. 7

Sprinkle salt and ready to serve!!
