  1. 150 gking prawns, cooked
  2. 200 gfresh spinach leaves
  3. 1onion
  4. 1 tbsppuréed ginger
  5. 1 tbsppuréed garlic
  6. 1 tbspoil
  7. 400 gcanned tomatoes
  8. 100 mlwater
  9. 2 tspground coriander
  10. 2 tspground cumin
  11. 1 tspground fenugreek
  12. 1 tspground turmeric

Cooking Instructions

    Gather your ingredients and mix the ground spices in a small bowl, finely slice the onion, and purée the garlic and ginger to a paste

    In a large non-stick pan, heat the oil and add the puréed garlic and ginger to brown for 30 seconds

    Next add the sliced onion and cook down for about 2 minutes until it softens

  4. 4

    Then add the spinach and cook for a further 2 minutes

  5. 5

    Now sprinkle the spice mix over the spinach and mix well.

  6. 6

    Next, add the tomatoes and mix well. Let this cook down for 3 or 4 minutes

  7. 7

    Lastly, add the prawns, and 100ml water. Simmer for a further 10 minutes, then you’re ready to serve!
