Bottlegourd(Calabash) also known as dudhi, lauki is a climbing vine. The fruit is harvest young and used as vegetable. It has light green smooth skin and white flesh inner side. Apart from making sabzi, bottle gourd is used for juice, soup, muthiya (popular steamed Gujarati snack), halva, kheer etc.
Bottle gourd is a vegetable high in water content and is a rich source of Vitamin C and Calcium. Which helps in maintaining a healthy heart and brings down cholesterol levels. The juice of bottle gourd is beneficial for diabetic patients as it stabilizes the blood sugar level and maintains blood pressure.
Though bottle gourd is not liked by all but to acquire it's health benefits and nutrients, we must include it in our diet.

Ingredients

2 persons
  1. 300-400 gramstender bottle gourd
  2. 1 tbspoil
  3. 1 tspcumin seeds
  4. 1 sprigcurry leaves
  5. 1 tspcoriander- cumin powder
  6. 1 tspred chilli powder
  7. 1/2 tspturmeric powder
  8. Pinchasafoetida
  9. 1 tbspjaggery
  10. 1 tbsplemon juice
  11. As Per TasteSalt

Cooking Instructions

    Peel and chop bottle gourd in dices.

    Heat oil, cumin seeds, once they splutters, add curry leaves, turmeric, asafoetida and bottle gourd dices. Mix and stir fry on high flame for 2 minutes.

    Then add water and let it cook on slow flame, cover the vessel for fast cooking.

    Once gourd is cooked, add all spices, salt, jaggery and mix well and cook for couple of minutes.

    Lastly add lemon juice and turn off the heat.

    Serve hot with roti, chapati, rice or khichdi.
    Note:
    1. Can add tomatoes too.
