This refreshing crunchy slaw balances well with a rich or oily curry. We whipped this up quickly using a bit of cabbage leftover in the fridge.
Cooking Instructions

Very finely slice the cabbage and place in a bowl.

Squeeze over the lime juice and sprinkle with salt, then scrunch and squeeze with your hands for a minute to break it down.

Set aside for 10 minutes.
- 4
Finely slice and stir through the coriander leaves, then serve.

A good way to check for the latter is to pick up a few of the same size and select the one that's heaviest for that size. This means the cabbage is fresh and still has a lot of its original water content. x -
