This refreshing crunchy slaw balances well with a rich or oily curry. We whipped this up quickly using a bit of cabbage leftover in the fridge.

Ingredients

2-4 servings
  1. 1/4of a white cabbage
  2. juice from 1/2 a lime
  3. 1good pinch of salt
  4. a fewsprigs of fresh coriander

Cooking Instructions

  1. 1

    Very finely slice the cabbage and place in a bowl.

    Squeeze over the lime juice and sprinkle with salt, then scrunch and squeeze with your hands for a minute to break it down.

  3. 3

    Set aside for 10 minutes.

  4. 4

    Finely slice and stir through the coriander leaves, then serve.
