  1. 6 stripsHickory smoked thick cut bacon
  2. 1 lbbag of pre-washed collard greens
  3. 1/4 cupdark brown sugar
  4. 1 tbspmaple syrup
  5. 1 tspwhite vinegar
  6. 1 tspminced garlic
  7. 1/2chopped white or yellow onion
  8. 3 cupschicken broth
  9. 1 tspsalt
  10. 1/2 tspblack pepper
  11. 1 tbspolive oil

    Rinse greens and cut each piece of bacon into 4 parts. Cook bacon in Dutch oven until crispy, remove bacon and add onion and garlic. Simmer for about 2 minutes.

    Add greens, chicken broth and water until greens are submerged. Cover pot. After 30 minutes add salt, pepper, sugar, syrup, and vinegar. Cover and boil for an hour stirring occasionally. During final 15 minutes, add bacon back into pot and olive oil.
