Last night, I really wanted to eat a lemony sweet. But I was too tired to make anything. Then, I decided to make ‘Instant Mug Cake’ that is super quick and easy. I poured a mixture of Lemon Juice and Sugar over it. It didn’t take 5 minutes to make it. But this lemony mug cake satisfied my craving. I made it again today. I used a lot of Sugar for one mug cake, but I needed it because of the sourness of Lemon.

Ingredients

1 Serving *I used 380ml mug
  1. 1 tablespoonButter *1 tablespoon is 15ml
  2. 2 tablespoonsCaster Sugar
  3. 1Egg
  4. 4 tablespoonsSelf-Raising Flour
  5. *Note: You can add some finely grated Lemon Zest
  6. Lemon Syrup
  7. 1-2 tablespoonsLemon Juice
  8. 1-2 tablespoonsCaster Sugar

Cooking Instructions

    In a small bowl, combine Lemon Juice and Caster Sugar.

    Place Butter in a mug, microwave for 20-30 seconds OR until Butter melts. Add Sugar and mix well.

  3. 3

    Add Egg and mix well, then add Flour and mix well until smooth.

  4. 4

    Microwave for 1 to 1 & 1/2 minutes OR until cooked. Gently pour Lemon Syrup over the hot cake and wait for a few minutes, and enjoy.

My microwave is 700w so I did 3minutes and it was a little overdone so next time I'll knock 30 seconds off and see how that goes, the egg smell worried me but it was very yummy and I topped mine with some lemon butter/curd.
