Ingredients

5 servings
  • 200 gmSoya chunks
  • 3-4 tbspOlive Oil or Butter
  • 2 tspGarlic mince
  • 2 tspSoy sauce
  • 2 tspSalt or to taste
  • 1 tspCumin powder
  • 2 tbspChilli Garlic sauce
  • 1 tbspVinegar
  • 2 tspBlack Pepper powder
  • 1small bunch chopped Coriander Leaves
  • 1 bunchchopped Spring Onion Greens
  • 1large Green Bell Pepper julienne
  • 1Carrot julienne
  • 1 cupshredded Cabbage
  • 500-600 gmraw Rice

    Keep a vessel with water as required. Bring it to a rolling boil. Then add in the soaked and drained rice. (The rice shouldn't be soaked for too long, the more it's soaked, the more delicate the rice will be.) Boil soya chunks in enough water with a little salt. Drain and squeeze well so that it's absolutely dry.

    Meanwhile, in a cooking pot, add Butter or Oil. To this, add in Garlic mince and the Spring Onion Greens. You can also add other ingredients one by one and stir fry the Soya chunks first for a few minutes followed by the Vegetables. Saute until crisp and done. Oil should be added generously. It would give both flavour and texture.

    Next, pour in water. (As easy this step may seem, it is the place where many of us tend to go wrong.) Water should always be added proportionally. For 1 glass of rice that has been drained and soaked, 2 glasses of water will be required. This is the correct proportion.)

    Once this is done, mix the rice ever so gently so that everything is well mixed. Wait till the water boils before covering the pot with a lid. Don't overmix or the rice will break. Cook the rice on high flame for the first 5 minutes. Then lower the flame and let it cook for about 10-15 minutes. The rice will cook for approximately 20-25 minutes.

    After the Rice is done, transfer the Soya and Vegetables mix to the pot and toss well. Allow this to stand for another 5 minutes before serving. This awesome Rice can be served with any Indian dish which is a gravy in general or Chicken Manchurian or any Chinese side dish as well. Yum! Enjoy!
